Flygande Jakob (flying Jakob) is a modern Swedish classic, invented in the 70s by an airline freight man called Arne. I love its savoury weirdness, as it mixes whipped cream, ketchup, curry and banana. The original includes chicken and bacon, but I enjoy this one with quorn. In trying to become a half-veggie, recipes such as these are a good way of substituting chicken, telling no substantial difference whatsoever.
I tend to be skeptical of meat imitations, because vegetarian food holds it own very well without copying meat, and also because imitations rarely taste as good as the real thing. But this tastes marvellous, and I over-binge every time we make this at home.
For four portions, you need:
- 2 bags of defrosted quorn (or 500 grams of chicken)
- Bacon (optional, for the meaties)
- 4 dl cream
- 1 tsp mild madras curry powder
- 1 1/2 dl ketchup
- 2 bananas
- 2 handfuls peanuts or cashewnuts
- Basmati rice and sriracha sauce to serve
Start by frying the quorn pieces in a little bit of the curry powder and oil. Once they’ve taken on some colour, let them cool while you whip the cream. Mix the ketchup into the the cream, and add the rest of the curry powder. Cut the banana up in fat, coin-sized pieces, and scatter it with the quorn in an oven-proof pan. Distribute the whipped cream evenly on top, and let it sit in the oven at 200 degrees for about 20 minutes, or until it has browned on top. About five minutes before you think it’s ready, scatter the nuts on top, and put it back into the oven.
Take it out and let cool slightly while you prepare a cold beer and set the table. Serve it with basmati rice, and some sriracha chili sauce on top for those who want to some heat with the savoury sweetness. Needless to say, this really does taste better the day after, and makes for a perfect lunchbox. We’ve tried making it healthier by substituting cream with Turkish yoghurt, but I would not recommend it.
Behold the best tapas I’ve ever had. Two weeks ago I was in Barcelona, and was lucky enough to be taken to Cuidad Contal. Ciudad Contal is the old name for Barcelona, and also a beautiful and popular tapas bar.
Arriving in the afternoon, we avoided the worst queues and were seated rather rapidly after a quick, ice cold beer in the bar (and very cheap at that). The bar had a beautiful display of some of the cold, prepared tapas, and I fell straight away for a beautiful creature resembling a black egg with pink stuff coming out of it. Once seated, Victor managed to decipher my description and ordered fig with mascarpone and jamon (montadito de higo, mascarpone y jamón ibérico, below).
If it’s possible to pick one favourite from the various tapas dishes, this would be it. The sweet, crispy fig mixed with the velvety and rich mascarpone posed a perfect contrast to the salty jamon. It’s no revolutionary dish or combination, but proof that classics are classics for a reason.
Aside from my personal star of the table, a favourite between the three of us was the black rice (arroz negro con sepia). This was also displayed at the bar, steaming and glittering, and quickly vanishing. Just as the other dishes, it was very simple: rice with squid ink and gently cooked octopus, served with a dollop of allioli. It was also accompanied by small pieces of bread rubbed in tomato, olive oil and salt (pa amb tomaquet), which were perfect for scooping the rice. This staple way of making bread has won my heart over, after a long struggle against indulging in olive oil.
We also ordered in some grilled green peppers, doused in sea salt flakes (pimientos del padrón). The grill made them smoky in a mellow way, which contrased very well to the sweetness of the pepper and the salt.
The deep fried baby squid (calamares a la andaluza) was incredibly tender and juicy, perfect with a little dash of lemon. We finished this very, very quickly. Such a simple dish, yet with the added lemon, one of the most bite-friendly things ever.
The seafood at this place was so tender it’s difficult to compare it to anything. The gambas (gambas a la plancha) were no exception. I would assume these were steamed, then quickly dressed before going onto the table. They were too hot to hold when they arrived. Again, delicious.
Victor’s personal choice was a little entrecote on a stick (montadito de solomillo). It was charred in the edges and oozing red inside, absolutely perfectly cooked. Blissful.
All in all this was a near-perfect meal (I’m not sure what could be changed gastronomically to improve it). If you’re in Barcelona, you should ignore the fact that this magnificent place is placed at the bottom of touristy La Ramblas, as well as the fact that it’s packed nearly all the time. You should just dive in, and gratefully accept a cold beer (or three) while you wait for a precious table. Our meal landed at 17 euros each with was a bargain given the high quality of the food, and I simply cannot recommend it highly enough. 9,5 meatballs out of 10.
Kedgeree is a slightly odd Anglo-Indian dish stemming from the Colonial era, encapsulating smoked haddock, curry powder, rice and milk. I know those taste combinations sound odd, but it is actually really nice: imagine a lemony and fresh biryani with smoked fish. The oddness of the dish, married with the fact that it is a breakfast classic (indeed so much of a classic people don’t make it much anymore), meant that it was predestined to end up as a Breakfast Fetishism item on the blog. I made my first attempt at making it this morning. This was brought on by Mr Meatball’s grandmother’s reminiscing about the dish the other day: born in Shanghai in 1928, she recalls this dish being served on silver plates in houses that had butlers!
The end result was very tasty: savoury and mellow through the smokiness of the fish but refreshing with the spices and the lemons. Admittedly it would perhaps not be the first thing I’d think to eat in the morning, but rice and fish are good ingredients to last you through the day so I may have to reconsider that. You need:
- 400g smoked haddock (I bought frozen dyed haddock from Waitrose – theirs is sustainable and good quality but much cheaper than the stuff you get in the fresh section)
- 450 g basmati rice (preferably good quality as rice is central to the dish)
- 2 green chillies, chopped into rings with their seeds
- 1 large onion (a sweet Spanish variety would work nicely)
- 1 large tablespoon mild curry powder
- 2 crushed cardamom pods
- A handful of chopped coriander and chives
- 3 hardboiled eggs
- 1 lemon, cut into slices
- 140 g butter (this is important, I did perhaps not use quite enough in my first attempt)
- Nutmeg (optional, to sprinkle on top in the end)
Start by putting the rice in cold water and let it stand for up to half an hour. There’s a whole school on being able to cook basmati rice properly and I’m still a novice, which explains why I use Mr Meatball’s coffee brewer to rinse the rice (some people have an angel’s patience with my kitchen experiments…). While the rice soaks, poach the defrosted fish gently by putting it in a pan on low heat, and cover it with 50/50 cold milk and water. After ten minutes (or until the fish is done, you want to be careful not to over-cook it), take it off the heat. Preserve the liquid milk/water is was cooking in.
Now, depending on if you want your kedgeree to be dry and fluffy, or wet and buttery you proceed through the next two steps differently. I made mine dry and fluffy, but Delia’s wetter version sounds quite nice and I think I might go along that next time.
For a wet kedgeree, you fry the butter in the pan, add your onions to soften for a few minutes and then add the curry powder, green chili and cardamom pods to fry for a few seconds. Then add your rinsed rice, and pour in 450 ml of the milk/water liquid. Bring to boil, and give a brisk stir before putting on a tight-fitting lid and cooking on low heat for 20 minutes.
If you want a fluffier kedgeree, you fry the onion and spices in the butter separately to the rice, and cook the rice with a tight-fitting lid on according to your harshest basmati-instructions (these are usually on the packet: for me it included not opening the lid of the pan for 25 minutes and then letting it rest on a wet towel, still with the lid on, for five minutes).
Once the rice cooking is done, for both methods, you add the flaked fish (which you remove the skin from whilst the rice is cooking), boiled eggs and lemon juice. Serve with mango chutney and scatter coriander across the top.
